Restaurant Operations Manager / Executive Chef
Location: Cuccay Cozumel, Quintana Roo
Position Summary
We are seeking an experienced Restaurant Operations Manager / Executive Chef to lead our restaurant with a focus on leadership, operational excellence, guest satisfaction, and culinary consistency.
This is not simply a chef position. We are looking for a hands-on leader who can build and develop a team, establish systems, control costs, and create an exceptional guest experience while maintaining outstanding food quality.
The ideal candidate is passionate about hospitality, thrives in a fast-paced environment, and has a proven track record of leading successful restaurant operations.
Key Responsibilities
Leadership
- Lead, inspire, and develop the restaurant team.
- Recruit, train, and retain high-performing employees.
- Create a positive, accountable culture.
- Conduct daily pre-shift meetings.
- Coach and mentor supervisors and kitchen staff.
Kitchen Operations
- Maintain consistent food quality and presentation.
- Ensure recipes and portions are followed precisely.
- Develop seasonal menu specials.
- Maintain food safety and sanitation standards.
- Supervise kitchen production and service.
Restaurant Operations
- Oversee daily restaurant operations.
- Ensure exceptional guest experiences.
- Resolve guest concerns professionally.
- Improve speed of service.
- Maintain high cleanliness and organization standards.
Financial Management
- Control food cost.
- Control labor cost.
- Reduce waste.
- Manage purchasing and inventory.
- Analyze weekly financial performance.
- Recommend operational improvements.
Team Development
- Train all new employees.
- Conduct performance evaluations.
- Build future leaders.
- Create standard operating procedures (SOPs).
Qualifications
Required:
- Minimum 5 years managing successful restaurants.
- Experience leading teams of 15+ employees.
- Strong knowledge of inventory and food cost management.
- Excellent leadership and communication skills.
- Ability to work nights, weekends, and holidays.
- Fluent Spanish; conversational English preferred.
Preferred:
- Experience in high-volume casual dining.
- Experience in tourist destinations.
- Knowledge of Mexican cuisine and modern taco concepts.
- Experience with POS systems and restaurant reporting.
